Why use InLeit Protein?

InLeit proteins are rich in ‘useful’ proteins that allow the development of a wide range of textures, from cream cheese to block cheese, and allow the development of many functionalities (stringy cheese effect in pizza for example).

The functionality varies greatly due to the proteolysis process during ripening.
